These Sweet Potatoes will be the hit of Thanksgiving! |
This Sweet Potato Recipe has been in my family for years and years. It is an absolute hit and everyone begs to have it made every year for Thanksgiving. Imagine my surprise when I was reading Pioneer Woman's blog and saw her Sweet Potato Recipe... It was the exact same, only she uses Dark Brown Sugar and I use Light.
No Fail Sweet Potato's
3 - 3 1/2 Cups baked yams (skin on)Mix the yams with:
1/4 C butter
1/4 C sugar (can use up to 1/2 cup)
2 large eggs
1/2 C milk
1 tsp vanilla
dash of salt and pepper
Mix the above with the mixer until light and airy. Spary a 9x13 pan with Pam. Pour yam mixture into prepared pan. Top with the Streusel topping and bake at 350 for 30-35 minutes.
Streusel Topping:
1/2 C brown sugar
1/3 C flour
1/4 C soft butter
1 C pecan gems (I leave these out because I am allergic,and it tastes wonderful without them!)
Combine all ingredients and crumble over yam mixture. Even the kids will love this! It tastes like yummy candy, according to the four year old.
